Baked Apple Pudding (Gebakte Appelpoeding)

Description

A comforting and simple baked fruit pudding, usually featuring apples (or other seasonal fruit) topped with a light, cake-like batter. Delicious served warm with custard or cream.

Ingredients

  • 4-5 medium apples (e.g., Granny Smith or other baking apples), peeled, cored, and sliced
  • 30ml (2 tbsp) Lemon juice
  • 60ml (4 tbsp) Sugar (for apples)
  • 5ml (1 tsp) Ground cinnamon (for apples)
  • For the Batter:
    • 125g (1/2 cup) Butter, softened
    • 125ml (1/2 cup) Castor sugar
    • 1 large egg
    • 250ml (1 cup) Cake flour
    • 10ml (2 tsp) Baking powder
    • Pinch of salt
    • 125ml (1/2 cup) Milk
    • 5ml (1 tsp) Vanilla essence

Instructions

  1. Preheat oven to 180°C. Grease a medium ovenproof dish (approx. 20x20cm).
  2. In a bowl, toss the sliced apples with lemon juice, 60ml sugar, and ground cinnamon. Spread the apples evenly over the bottom of the prepared dish.
  3. Make the Batter: In a mixing bowl, cream together the softened butter and castor sugar until light and fluffy.
  4. Beat in the egg, mixing well.
  5. Sift the cake flour, baking powder, and salt together.
  6. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined. Stir in the vanilla essence.
  7. Carefully spoon the batter over the apple layer in the dish, spreading it gently to cover the apples.
  8. Bake for 35-45 minutes, or until the top is golden brown and a skewer inserted into the cake part comes out clean.
  9. Serve warm with custard, ice cream, or cream.
