Description
A spicy vegetable relish originating from South Africa, often made with carrots, beans, peppers, and sometimes cabbage. It's bursting with flavor and heat, making it a perfect accompaniment to pap, braai meat, or stew.
Ingredients
- 30ml (2 tbsp) oil
- 1 large onion, finely chopped
- 1-2 cloves garlic, crushed (optional)
- 1-2 fresh green or red chillies, finely chopped (adjust to taste)
- 15ml (1 tbsp) mild curry powder
- 5ml (1 tsp) ginger (freshly grated or ground)
- 500g carrots, grated
- 1 large green pepper, deseeded and finely diced
- 1 can (410g) baked beans in tomato sauce (or butter beans for a different texture)
- Salt and freshly ground black pepper to taste
- Fresh coriander, chopped (for garnish, optional)
Instructions
- Heat oil in a large pot or deep pan over medium heat.
- Add onion and sauté until soft and translucent (about 5 minutes).
- Add garlic (if using), chillies, curry powder, and ginger. Cook for 1 minute, stirring constantly, until fragrant.
- Stir in the grated carrots and green pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften slightly.
- Add the can of baked beans (including the sauce). Stir well to combine.
- Bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the carrots are tender and the flavors have melded.
- Season with salt and pepper to taste. If it's too dry, you can add a little water, but it should be a relish consistency.
- Serve warm or cold. Garnish with fresh coriander if desired. Excellent with pap, samp, stews, or braai meat.
