Curry Mince & Peas

Description

A simple, quick, and economical weekday meal, especially popular in homes with children. It's a mildly spiced mince (ground meat) and pea dish, often served with rice, toast, or vetkoek.

Ingredients

  • 500g beef mince
  • 15ml (1 tbsp) oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed (optional)
  • 15ml (1 tbsp) mild curry powder (adjust to taste)
  • 5ml (1 tsp) turmeric
  • 1 can (410g) chopped tomatoes or 2 large ripe tomatoes, grated
  • 125ml (1/2 cup) beef stock or water
  • 250ml (1 cup) frozen peas
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat oil in a large frying pan or pot over medium-high heat. Add mince and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and sauté until soft. Add garlic (if using) and cook for 1 minute until fragrant.
  3. Stir in curry powder and turmeric. Cook for 30 seconds.
  4. Add grated tomatoes and beef stock/water. Bring to a simmer.
  5. Reduce heat to low, cover, and cook for 15-20 minutes, or until the sauce has thickened. Stir occasionally.
  6. Stir in the frozen peas and cook for another 5 minutes, or until the peas are tender and heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot with rice, toast, pap, or as a filling for vetkoek.
