Description
A fundamental South African meal, usually referring to a simple, home-style minced meat curry (sometimes with potatoes) served with plain white rice. It's a comforting and adaptable dish.
Ingredients
- For the Curry:
- 500g beef mince
- 30ml (2 tbsp) oil
- 1 large onion, finely chopped
- 2-3 cloves garlic, crushed
- 15ml (1 tbsp) grated fresh ginger
- 30ml (2 tbsp) mild or medium curry powder (adjust to taste)
- 5ml (1 tsp) turmeric
- 2 ripe tomatoes, grated or finely chopped (or 1 can (410g) chopped tomatoes)
- 2-3 medium potatoes, peeled and cubed
- 250ml (1 cup) beef stock or water
- 15ml (1 tbsp) apricot jam or sugar (optional, for sweetness)
- Salt and freshly ground black pepper to taste
- For the Rice:
- 500ml (2 cups) white rice
- 1 litre (4 cups) water
- 5ml (1 tsp) salt
Instructions
- Prepare the Rice: Rinse rice well. Place rice, water, and salt in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and rice is tender. Fluff with a fork.
- Make the Curry: Heat oil in a large pot or deep frying pan over medium-high heat. Add mince and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and sauté until soft. Add garlic and ginger and cook for 1 minute until fragrant.
- Stir in curry powder and turmeric. Cook for 30 seconds.
- Add grated tomatoes, cubed potatoes, and beef stock/water. Stir well. Add apricot jam/sugar if using.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20-30 minutes, or until potatoes are tender and the sauce has thickened. Stir occasionally.
- Season with salt and pepper to taste.
- Serve hot with the prepared white rice. A side of chutney or sambals is a great addition.
