Malva Pudding with Custard

Description

A classic South African dessert, Malva pudding is a sweet, spongy pudding made with apricot jam, served hot with a rich, creamy sauce poured over it straight from the oven. It's truly decadent and comforting.

Ingredients

  • For the Pudding:
    • 250ml (1 cup) cake flour
    • 2.5ml (1/2 tsp) bicarbonate of soda (baking soda)
    • Pinch of salt
    • 125ml (1/2 cup) sugar
    • 1 large egg
    • 15ml (1 tbsp) apricot jam
    • 15ml (1 tbsp) vinegar (white or brown)
    • 30ml (2 tbsp) melted butter
    • 125ml (1/2 cup) milk
  • For the Sauce:
    • 125g butter
    • 125ml (1/2 cup) sugar
    • 125ml (1/2 cup) water
    • 125ml (1/2 cup) cream (or evaporated milk)
    • 5ml (1 tsp) vanilla essence

Instructions

  1. Preheat oven to 180°C. Grease a medium ovenproof dish (approx. 20x20cm).
  2. Make the Pudding: Sift flour, bicarb, and salt together into a bowl.
  3. In a separate bowl, whisk the sugar and egg until light and creamy.
  4. Stir in the apricot jam and vinegar into the egg mixture.
  5. Melt the butter and milk together (gently in a microwave or small pot).
  6. Alternate adding the flour mixture and the butter-milk mixture to the egg mixture, mixing gently until just combined. Do not overmix.
  7. Pour the batter into the prepared dish and bake for 30-40 minutes, or until golden brown and a skewer inserted comes out clean.
  8. Make the Sauce: While the pudding is baking (about 10 minutes before it's done), combine all sauce ingredients in a saucepan. Bring to a gentle boil, stirring until the butter and sugar have melted completely. Simmer for 2-3 minutes.
  9. Combine: As soon as the pudding comes out of the oven, pour the hot sauce evenly over the entire hot pudding. The pudding will absorb the sauce.
  10. Serve warm with custard, ice cream, or cream.
