Sweet Potato Salad (Soetpatatslaai)

Description

A delicious alternative to traditional potato salad, featuring tender sweet potatoes in a creamy, tangy dressing. It adds a lovely sweetness to any meal, especially a braai.

Ingredients

  • 1kg sweet potatoes, peeled and cubed (approx. 2-3cm pieces)
  • Salt to taste
  • For the Dressing:
    • 250ml (1 cup) Mayonnaise (full fat)
    • 60ml (4 tbsp) Milk
    • 15ml (1 tbsp) White vinegar
    • 15ml (1 tbsp) Sugar (or to taste)
    • 5ml (1 tsp) Mild curry powder (optional, adds a subtle warmth)
    • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Place cubed sweet potatoes in a pot, cover with cold salted water, and bring to a boil. Cook for 10-15 minutes, or until just tender but still firm enough to hold their shape. Drain well and let cool completely.
  2. Make the Dressing: In a large bowl, whisk together the mayonnaise, milk, white vinegar, sugar, and curry powder (if using). Season with salt and freshly ground black pepper to taste.
  3. Gently add the cooled sweet potato cubes to the dressing. Fold carefully to coat all the potatoes without mashing them.
  4. Cover and refrigerate for at least 1-2 hours to allow the flavours to meld.
  5. Serve chilled, garnished with fresh parsley if desired.
