Sweet Potato Salad (Soetpatatslaai)

Description
A delicious alternative to traditional potato salad, featuring tender sweet potatoes in a creamy, tangy dressing. It adds a lovely sweetness to any meal, especially a braai.
Ingredients
- 1kg sweet potatoes, peeled and cubed (approx. 2-3cm pieces)
- Salt to taste
- For the Dressing:
- 250ml (1 cup) Mayonnaise (full fat)
- 60ml (4 tbsp) Milk
- 15ml (1 tbsp) White vinegar
- 15ml (1 tbsp) Sugar (or to taste)
- 5ml (1 tsp) Mild curry powder (optional, adds a subtle warmth)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Place cubed sweet potatoes in a pot, cover with cold salted water, and bring to a boil. Cook for 10-15 minutes, or until just tender but still firm enough to hold their shape. Drain well and let cool completely.
- Make the Dressing: In a large bowl, whisk together the mayonnaise, milk, white vinegar, sugar, and curry powder (if using). Season with salt and freshly ground black pepper to taste.
- Gently add the cooled sweet potato cubes to the dressing. Fold carefully to coat all the potatoes without mashing them.
- Cover and refrigerate for at least 1-2 hours to allow the flavours to meld.
- Serve chilled, garnished with fresh parsley if desired.
