Description
A quintessential South African relish, simple yet bursting with flavour. It's a slow-cooked mixture of tomatoes and onions, often spiced, and is the perfect accompaniment to pap, rice, stews, or braai meat.
Ingredients
- 30ml (2 tbsp) Oil
- 2 large onions, thinly sliced
- 3-4 ripe tomatoes, roughly chopped (or 1 can (410g) chopped tomatoes)
- 1 green chilli, deseeded and finely chopped (optional, for heat)
- 5ml (1 tsp) Curry powder (optional, mild)
- 5ml (1 tsp) Sugar (optional, to balance acidity)
- Salt and freshly ground black pepper to taste
- Fresh coriander, chopped (for garnish, optional)
Instructions
- Heat oil in a pot or frying pan over medium heat.
- Add the thinly sliced onions and sauté until soft and translucent, but not browned (about 5-7 minutes).
- Add the chopped tomatoes and green chilli (if using). Bring to a simmer.
- Stir in the curry powder (if using) and sugar (if using).
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the tomatoes have broken down and the sauce has thickened. Stir occasionally.
- Season generously with salt and freshly ground black pepper to taste.
- Serve warm, garnished with fresh coriander if desired. Perfect with pap, rice, or as a side for any main meal.
